To add to Brian's suggestion, I had 83-84 GTI seats in my
truck for a couple of years.  They were very supportive but
a bit worn out.  I found a set of Recaro seats from a '90
Jetta on Craigslist that were in perfect shape for about
$250.  They are even better than the GTI seats and were
a pretty easy bolt in job. Note that these seats have
high bolsters and are quite firm compared to the stock
Rabbit seat.

I think that as Brian said, the Corrado seats, or seat
bottoms are a bit lower, and for for taller folks, might
make a good option.  To me, these seats were a better
choice than recovering a set of basic Rabbit seats.
